Low and slow, parked near you
Brisket, pulled pork and smoked chicken thighs from a trailer smoker that runs on maple and oak. We park at two business parks for lunch, a brewery patio on Thursday nights and the Saturday market.
What we smoke
Four meats, and the clock decides
Nothing goes on the menu until it has had its full time over the wood. That is why some things run out.

Brisket
Salt and coarse pepper, smoked overnight, rested in butcher paper. From $17 in a sandwich.
- 12hours
Pulled pork
Pork shoulder with a brown sugar and paprika rub, pulled by hand at the window.
- 2½hours

Bone-in, skin crisped over the firebox at the end, brushed with a vinegar mop.
- Frionly
Burnt ends
Cubes cut from the brisket point, sauced and smoked again. One tray, until it is gone.
