Tuesday to Sunday, from 7 a.m.
Bread out of the fire by seven.
Naturally leavened loaves from a wood-fired oven, butter pastries, and a breakfast you can take your time over. On the corner of Kettlewell Street, downtown Guelph.
The oven is lit at 4 a.m. and fed until noon.
Today's bake
What comes out of the oven, and when
A wood-fired oven doesn't hold one temperature, so we bake in the order the heat allows. Come at the right time and it's still warm.
- Country sourdough, seeded and light ryeThe first loaves out of the hearth, still crackling when the door opens.
- Croissants and pain au chocolatLaminated the day before, baked as the oven settles.
- Baguettes, first batchSaturdays: the weekend specials come out with them.
- Focaccia and sconesThe focaccia becomes today's lunch sandwiches.
- Second baguettes and soup rollsFor the lunch crowd and anyone who missed the morning.
- Cookies and afternoon loavesOatmeal, brown butter chocolate chip and a few late sourdoughs.
- Dark rye, in the falling heatBakes slowly as the oven cools and rests overnight. Sold from tomorrow.
Breakfast and lunch
Sit down, it's all on our bread
Two eggs your way on a thick slice of this morning's sourdough, with roast tomato, greens and cultured butter.
A new soup every day, with a hunk of bread from the second bake.
