Broth all night. Noodles all day.

Ramen and udon at one long counter. The pots go on after we close and simmer until we open, so the broth in your lunch bowl started the night before.

The night shift

We don't start cooking when you order. We start the night before.

Pork bones go into the big pot after close. A night cook skims and tops it up until morning, then we strain, season with our own tare and taste every pot before the doors open. A kombu and shiitake broth is made fresh each day too, so there is always a vegan bowl.

When a broth runs out, it's gone for the day. On busy Saturdays that can be around 21:00.
